Caroline's Super Supper Inspiration Boxes

'Papotsakia' ("Little Shoes")
A vegetarian-friendly medley of chick peas, baked aubergines, chopped tomatoes, roasted peppers and halloumi fries served with sourdough bread.
For our first box, all you will need to buy is a tin of chick peas and some smoked paprika.
First off, boil a pan of hot water with a little salt. Slice the aubergines in half, score them on the flesh side and sit them the boiling water. When the flesh is soft, remove the flesh, taking care to keep the skin intact. Meanwhile, sauté the red onions in a pan with garlic, fresh parsley and a good sprinkle of smoked paprika in olive oil until soft. Add the chopped aubergine flesh and chopped tomatoes. Season to your taste and continue to fry until the mixture comes together. Add the mixture to the aubergine halves, sprinkle with crumbled feta and bake for 20 minutes until browned. For the peppers: slice in half lengthways, fill with a mixture of chick peas, seasoning, garlic, sautéed red onion and sautéed padron peppers. Bake with the aubergines. Slice the halloumi and fry, serve all with fresh warm sourdough bread.
The total cost for this Dinner box comes to £29.54, enough for a generous supper for two.

'Blue-Cheese Bliss'
Our second dinner box comprises of our magical wild mushrooms, leeks and tasty tarragon with our fantastic 'Whey-More' blue cheese on rosemary sourdough, we think its best alongside a chicory and padron pepper salad.
Slice the rosemary sourdough, toast it and set aside for later. In a medium to large pan, sauté red onions in a dash of olive oil, and add chopped garlic. Thoroughly rinse and then slice the leeks and add them to the pan with the mushrooms, add a bit of seasoning to your taste, and let the mixture 'sweat' until the mushrooms re-absorb their water. Next stir in the tarragon and enjoy the wonderful aroma waft around your kitchen. Crumble up as much blue cheese as you wish and stir it into the pan. Gently assemble the mixture onto the sourdough toast, we usually would add a little more blue cheese on top, and place them under a hot grill.
To prepare the salad...sauté the padron peppers in olive oil and sea salt. Wash your salad and mix all together with a dressing of your choice (a little balsamic with olive oil and salt is always an easy win). Crumble a little feta over the salad and serve alongside the blue-cheese toast.
